 A business selling pre-cooked and raw food items know that the importance of taste and quality is secondary to the aesthetic placement in increasing sales through an open display merchandiser. Bakeries and meat delis can leverage the art of strategic display and beautiful presentations to attract customers into trying out different products from the visual appeal. Forced Air.
Deli Cases with forced air systems employ fans to circulate cold air in the cabinet, allowing the contents of the case to maintain a cold temperature. This kind of cooling system is ideal for baked goods such as cakes, pastries, pies, puddings, etc. However, an important factor to consider before investing in a forced air display merchandiser is its effect on the goods and their optimal storage capacity. Due to the design and function of the case, the cold air circulation can cause the contents to dry out if not packed properly or left for far too long. Thus, forced air systems are great for prepackaged food and boxed bakery goods, but attention must be paid to the temperature and duration.
 
Gravity Coil.
On the other side are deli cases with gravity coil systems. This is similar to the domestic freezers that preserve frozen foods for a healthy amount of time. However, the Commercial-grade display merchandiser with a gravity coil is a little different in the way that the cold air is much stronger. In these systems, a refrigeration coil situated at the top of the cabinet “drops” cool air on the contents placed below, so the cold air hits the food from the top and disperses at the sides. Gravity coil deli cases are best suited for delis that display and serve raw meat, seafood, salads, and other semi-cooked food without needing for it to be packaged. Due to the simpler mechanism and lesser risk of damage to the food stored, gravity coil cases are also cost less as compared to the forced air ones.
